Pork and apple; cheddar and apple; apple and sage – all these are hallmark flavor combinations, so we’ve combined them into one cheeseboard-inspired pizza packed with texture and flavor.
This recipe is an excerpt from our cookbook, Ooni: Cooking with Fire. “Bacon and apple is a classic flavor combination, and adding cheddar and fragrant sage to them makes for a killer pizza topping,” says Ooni CEO, Kristian Tapaninaho. “It’s one of our favourite pizzas without tomato sauce on the base. Try it and you’ll see why we think it’s the food of champions!”
Makes 1 x 12” pizza
5.6oz (160g) Classic Pizza Dough (see note below)
⅔ cup (80g) cheddar cheese, grated
1 strip of bacon, chopped
¼ apple, cored and thinly sliced
Small handful sage leaves
Freshly ground pepper
Prepare your pizza dough ahead of time. To make a 12" pizza, we recommend preparing pizza dough balls that are 5.6oz (160g) each – our guide to making the perfect Classic Pizza Dough covers everything you need to know.
Fire up your Ooni pizza oven. Aim for 932˚F (500˚C) on the stone baking board inside. You can check the temperature inside your oven quickly and easily using the Ooni Infrared Thermometer.
Using a small amount of flour, dust your Ooni Pizza Peel. Stretch the pizza dough ball out to 12 inches and lay it out on your pizza peel.
Top the pizza base with the cheddar cheese, bacon, apple and sage leaves.
Slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly.
Once cooked, remove the pizza from the oven. Finish with the sea salt and pepper to taste, and serve immediately.
