Designed by legendary pizzaiolo Tony Gemignani, this extra high protein "00" artisan flour is a blend of hard wheat varieties. It went through rigorous development and hands-on testing in Tony's restaurants for six months before getting the signoff from Tony himself.
This flour works well for a variety of pizza styles such as New York, Sicilian and Roman. It also works well in other baked goods like focaccia, breadsticks and baguettes. It is best suited to lower cooking temperatures at under 650F / 340C.
