Makes 15 cinnamon rolls inside the Ooni Skillet
For the cinnamon rolls
1kg Classic Pizza Dough (see note below)
2 sticks (200g) butter, softened
3 tsp ground cinnamon
3.5oz (100g) caster sugar
For the icing
7oz (200g) powdered (icing) sugar
1 tsp vanilla extract
3 tbsp water
Prepare the pizza dough ahead of time. Our guide to making the perfect Classic Pizza Dough covers everything you need to know. Note that for this recipe, it’s not necessary to ball up the pizza dough – simply follow the recipe up until the bulk proving stage, so you end up with one large quantity of proved dough ready to turn into cinnamon rolls.
Mix together the cinnamon and sugar in a bowl.
Fire up your Ooni pizza oven. Aim for 350°F (180°C) on the stone baking board inside. You can check the temperature inside your Ooni pizza oven quickly and easily using the Ooni Infrared Thermometer.
Place your skillet inside the oven to warm up for a couple of minutes. Remove the skillet and add a tablespoon of butter to the warm skillet. Allow the butter to melt and spread it all over the surface of the skillet.
Once the pizza dough has proved, turn the dough out onto a lightly floured work surface. Using a rolling pin, press the dough out into a half-inch-thick sheet. Cover the dough with a generous layer of the softened butter, spreading it right to the edges. Dust over the cinnamon sugar mixture, making sure to ensure it’s evenly distributed.
From the edge of the dough, roll the sheet onto itself to form a long tube of dough, with the butter on the inside. Slice the tube of dough into 15 rounds of dough.
Place the skillet inside the oven and bake for 5-7 minutes or until the cinnamon rolls are puffed up and have a golden color all over the crust. Be sure to rotate the skillet as needed to achieve an even bake. Remove from the oven and allow to cool for 1-2 minutes.
While the cinnamon rolls cool, prepare the icing. In a bowl, combine the powdered (icing) sugar, water and vanilla extract and stir until smooth and well combined. If you’d like the icing to have a lighter consistency, add a little extra water until it’s the texture you’re after.
Drizzle the icing over the top of the warm cinnamon rolls and serve right away!
