Layered with seared Romaine lettuce leaves, zesty grilled shrimp, creamy avocado slices and tabasco-spiked seafood sauce, our Shrimp Cocktail Pizza is a chargrilled take on the beloved starter.
Makes one 12” pizza
For the seafood sauce
Half cup mayonnaise
Quarter cup ketchup
Juice of 1 lemon
1 tbsp tabasco
1 tbsp Worcestershire sauce
Salt and pepper, to taste
For the prawns
6 fresh large shrimp (prawns), shelled, deveined & sliced in half lengthways
Juice of 1 lemon
4 tbsp olive oil
2 tsp salt
For the pizza
5.8oz (165g) pizza dough ball (see note below)
5 tbsp (90ml) pizza sauce (see note below)
2.8oz (80g) mozzarella
Handful Romaine (gem) lettuce leaves, torn
Half avocado, sliced
Prepare your pizza dough ahead of time. To make a 12" pizza, we recommend preparing pizza dough balls that are 5.8oz (165g) each – our guide to making the perfect Classic Pizza Dough covers everything you need to know.
For the sauce for this pizza, we recommend preparing our easy Ultimate Pizza Sauce. With a hint of garlic, salt and basil, it's the ideal pizza sauce that will help to bring out the flavors in the other ingredients used here.
Once your dough and sauce are ready, fire up your Uuni 3 or Uuni Pro. Aim for 932˚F (500˚C) on the stone baking board inside. You can check the temperature inside your oven quickly and easily using the Uuni Infrared Thermometer.
Start by prepping the seafood sauce. In a bowl, mix together the seafood sauce ingredients until well combined. Refrigerate until the pizza is ready.
Next, marinate and grill the prawns. Place your Grizzler in your oven to warm up. In the meantime, combine the lemon juice, salt, olive oil and prawns together in a bowl, and toss well to coat the prawns. Add the marinated prawns to the hot Grizzler and grill in the oven until just cooked through – it’s important not to overcook the prawns at this point so that they don’t become tough and chewy once cooked on top of the pizza. Set the prawns aside.
Now, prepare your pizza. Using a small amount of flour, dust your Uuni Pizza Peel or Peel for Uuni Pro. Stretch the pizza dough ball out to 12" and lay it out on your pizza peel. Using a large spoon or ladle, spread the sauce evenly across the pizza dough base. Top with the mozzarella, lettuce and prawns.
Slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly.
Once cooked, remove the pizza from the oven. Dollop the seafood sauce on each of the prawns, finish with the avocado slices and serve.
