Chicken, Mushroom and Pesto Pizza

With all the (equally) delicious flavors of chicken pesto pasta, this chicken, mushroom and pesto pizza is so much more. Creamy pesto, succulent flame-cooked chicken, and earthy mushrooms come together for a pizza that tastes truly incredible. Did we mention there’s cheese too? 

Cast Iron Pan

Makes 1x 12”/16” pizza

8.8/11.6oz (250/330g) classic pizza dough
4 tbsp classic pizza sauce
1 chicken breast fillet, sliced into strips
2 tsp of basil pesto
4-5 Mushrooms, sliced
2.5oz (70g) mozzarella cheese, torn into chunks
1tbsp olive oil
Fresh basil (to garnish)

Fire up your Ooni pizza oven. Aim for 950˚F (500˚C) on the stone baking board inside. You can check the temperature inside your Ooni quickly and easily using the Ooni Infrared Thermometer.

Add a dash of oil to your Cast Iron Pan, then add your chicken. Season with salt and pepper, and place the pan inside your Ooni oven while it heats up. Once the chicken starts to turn golden brown and is cooked through, remove the pan from the heat and set aside to cool.

Using a small amount of flour, dust your Ooni pizza peel. Stretch the pizza dough ball out and lay it flat on your peel. Using a large spoon or ladle, spread the pizza sauce evenly across the base. Top with the sliced mushrooms, then the mozzarella. Add a few dollops of pesto, then add your chicken. 

Slide the pizza off the peel and into your Ooni pizza oven, making sure to rotate the pizza regularly. 

Once cooked, remove the pizza from the oven. Sprinkle some torn fresh basil leaves and season to taste. Serve immediately!
